An emulsifier is something that mixes two oil and water-based components together. After shaking or stirring a mixture of an oil and water-based blend, a dispersion of the oil droplets in the water is formed. However, when the shaking or stirring is done, the two phases start to separate.
Here is where concept of an emulsifier comes in. When you add an emulsifier to the system, the droplets of oil remain dispersed in the water base, and the result is a stable emulsion. So if you are using essential oil in a water-based product, you will not end up with a well-blended mixture. Instead, you end up with the essential oil floating around in the water base, which is an emulsifier.
An emulsifier consists of a hydrophilic (water-loving) head and a hydrophobic (water-hating /oil-loving) tail. The hydrophilic head has an electric charge that will dissolve in water but not oil, whereas the hydrophobic end has a long carbon tail that dissolves in oil but not in water.
When you add essential oils to the emulsifier, the emulsifier's hydrophilic head moves towards the water-based portion of the blend and the hydrophilic tail moves towards the oil-based portion.
The emulsifier positions itself between the oil and the water and by reducing the surface tension, stabilizes the emulsion.
Lemon essential oil is a useful oil for adding to water. It may offer a better-tasting water as well as help the body’s immune system. Lemon is known for digestive benefits, as are citrus oils in general A drop or two is enough to provide some flavor and health benefits.

Just like people say grapefruit can be useful in weight management, it may be useful for the same when a drop or two of this oil are added to water.
Oils as medicine
Some people ingest essential oils for medicinal or health purposes, not just to flavor water. Brands make similar blends, which tend to include a combination of lemon, clove, cinnamon bark, eucalyptus, and rosemary. Raw honey or stevia are good options to sweeten this concoction. Similarly, rosemary, peppermint, geranium, thyme and other essential oils have been said to help with coughs. Tea tree oil is said to inhibit the growth of bad bacteria that cause sinus infections and respiratory issues.
